1 medium onion, diced
1 tablespoon olive oil
1 yellow bell pepper, diced
2 cloves of garlic, minced
1 lb ground bison
28 oz can crushed tomatoes

5 oz can black beans, rinsed and drained
1-2 tablespoons of chili powder
1 teaspoon Thai red chili paste (optional &#8212; use more chili powder if omitting)

<p>INGREDIENTS<br />
1 medium onion, diced<br />
1 tablespoon olive oil<br />
1 yellow bell pepper, diced<br />

1 lb ground bison<br />
28 oz can crushed tomatoes<br />
1 cup of water (or stock)<br />
5 oz can black beans, rinsed and drained<br />
1-2 tablespoons of chili powder<br />
1 teaspoon Thai red chili paste (optional &#8212; use more chili powder if omitting)</p>
<p>DIRECTIONS<br />
In a pot on medium heat, add the olive oil and then the onion. Cook for about five minutes until fragrant. Add the yellow pepper and garlic and saute for at least one minute. If using, here is where I added the Thai red chili paste, if not, season with about a teaspoon of the chili powder. Then add the ground bison and cook until almost cooked through, about another five minutes. Add another teaspoon of chili powder. Then, add the crushed tomatoes, one cup of water, and beans and season again with chili powder. Bring to a boil and then turn down the heat and let simmer for at least twenty minutes until serving.</p>
